CLEMENTINE AND POMEGRANATE POSSETS
A Seasonal Supper (well, pudding) for December that is a wonderful pink joy
MERRY CHRISTMAS ALL!
For my Seasonal Supper for December I have decided to actually not to do a supper but rather a beautiful pudding that might be useful for you in the coming days.
It’s got a high ease to effect ratio, ie. it looks very impressive but is actually really simple to make.
Possets are a set cream that is made by heating acid (citrus juice typically) and sugar and combining it with the hot cream. The alchemy that takes places makes the cream thicken almost instantly, and then as it cools it sets to the most delightful texture. It’s a perfect dessert to make the most of the seasons most divine bounty - clementines! I adore them, I am averaging about 3 a day at this point, and they are truly wonderful used in a posset. Another very seasonal ingredient for this month are pomegranates. Those beautiful fushia lumps are filled with delicious tart juice and jewelled seeds, so I like to put them to good use. I make a very simple jelly with the juice to top the possets and then finish with a pile of the seeds for absolute kitsch joy.
