ROSIE : Welcome again to another edition of More Please!

This week I have the utmost pleasure of sharing with you the most delicious menu honouring the celebration of Lunar New Year from chef Ana Da Costa. A Lunar New Year menu has been missing from The Dinner Party for a long time, and I am so pleased to finally be able to right that wrong with three beautiful dishes from Ana’s family in South East China. We will start with a supremely easy, supremely delicious Cantonese Steamed Fish,

then move onto divine Pork and Cabbage Dumplings,

and finally we have addictive Longevity Noodles to bring us luck and prosperity in the New Year. I hope it’s not bad luck to make all this all year round, because I very much want to.

I have been friends with Ana a few years now, and an admirer for even longer. She is a fiercely talented cook and business owner who works unbelievably hard. If you haven’t tried her Mama Da Costa XO Sauce then it is IMPERATIVE you buy some - it’s absolutely outstanding. She is of Macanese and Portuguese descent and through her I have learned an awful lot, not just about traditional Cantonese cookery but also the wonderfully nuanced food of Macau, where Cantonese meets Portuguese and creates something truly glorious. Ana cooks from the heart, her food is exciting, scrumptious and clever and I am so looking forward to seeing what comes next for her.

Ana wrote this weeks recipes, and I cooked and photographed them at home. All I can say is, you’re in for a bloody treat!!! Ok right, over to Ana!

NEXT WEEK ON MORE PLEASE - RHUBARB AND CRÈME FRAICHE MUFFINS
