Sweet Potato and Kale in Harissa-Onion Broth, Risi e Bisi and Huevos Rancheros

This week I’m sharing three recipes that I turn to when I am needing nourishment of the mind, body and soul relatively quickly, which sometimes feels counter intuitive. They are all ready in 30 - 40 minutes, making them perfect for a WFH lunch or weeknight dinner. These are dishes I cook often without really thinking about it, they are part of my reflexive cooking repertoire that are comforting and restorative.
Risi e Bisi is a risotto rice and pea soup from the Veneto in North East Italy. It is traditionally made in spring with fresh, young peas, but when I was growing up my dad used to make it a lot for us all year round, and it has become a staple comfort dish for me. It’s the most warming thing, soft tender rice and sweet peas in a delicate broth perfumed with parmesan.
Huevos Rancheros with Salsa Verde is truly my favourite WFH lunch (or brunch I suppose). There’s something about a fresh and zingy salsa that really changes your day and wakes both you and your fried eggs right up. Here on soft, creamy black beans and tortillas, with a side of avo, it’s pretty unbeatable and so good for you.
And finally Sweet Potato and Kale in Harissa-Onion Broth is a spicy, sweet delight and super easy to make. Sweet potatoes are so fudgy when they are stewed, and work brilliantly with the hot harissa and caramelised onions that are the base of our broth. Finished with kale and lots of good toppings, this is my kind of “healthy” food - thoroughly satisfying, rich and nourishing.
RISI E BISI
Seeing the ingredients list below, you could be forgiven this is a risotto, but it’s actually far easier and a lot more soothing. It’s kind of a baby food vibe, this soup, but that’s what I love about it. It’s great for when you are low on fresh ingredients too, if you, like me, always have peas in the freezer, parmesan in the fridge and rice on the shelf. I also highly recommend giving this to anyone sick - it will definitely make them feel better.
