This menu sounds - and looks - ravishing. One small question, re gelatine: could you give the quantity in grammes as well, please? (I don’t know the size of sheets used here so it would be reassuring do know the weight).

Thank you! Yes, gelatine can be a bit tricky can't it? I use the Dr Oetker Platinum Grade Gelatine Sheets -- but any brand of platinum grade gelatine sheet should do. 1 sheets weighs in at 1.8g on my micro scales. It's always a bit of a challenge if you're using a different grade or form of gelatine (e.g. bronze grade sheets or powdered gelatine) -- it might require a little trial and error!
