Hey Izzy! I’m so glad. I just think buying supermarket brand pasta means low quality flour, quick drying rather than slow, and basically overall a poor product. I definitely recommend buying Italian but it doesn’t have to be expensive necessarily - De Cecco and Rummo are great and cheap!
Love it. Could you replace the ricotta for a form of goat cheese if someone doesn’t eat cows milk (asking for a friend) and if so what would recommend?
Absolutely! Goats curd or goats cheese would be delicious, equally sheep's cheese like Wigmore would be divine! Or crush some good quality chickpeas with olive oil, lemon, salt and parsley and smear that on instead. XXX

Alcohol-free Martini Vibrante would be a great non alcoholic substitution for the pudding - sounds delicious, I’ll be making it!
